The Expression
Dragon Well, or Longjing, has been revered by Chinese emperors since the Song Dynasty. Its flat, jade-colored leaves are pan-fired in a wok by skilled artisans using bare hands. The result is a tea of extraordinary clarity: sweet, grassy, with a lingering chestnut finish.
Provenance
Longjing Village, West Lake, Hangzhou, China. The tea gardens here overlook one of China's most photographed landscapes. Emperor Qianlong visited Longjing in 1762 and conferred imperial status on 18 specific tea bushes.
Context
Dragon Well first appeared in records during the Tang Dynasty. Its name comes from a well near the Longjing Temple where a dragon was said to control the rain.
Our Approach
Longjing belongs to one of China's best-known green tea traditions. Sip Tea presents it through provenance, careful brewing, sensory attention, and cultural context rather than health promises.
Ritual
Prepare in a glass gaiwan or tall glass to observe the leaves as they unfurl. Use water that has just come off the boil and cooled.
